Three Cheese Pasta w/Zucchini

Brown - 1 pound Italian sausage
Drain grease from pan and add
1 small onion chopped
2 diced garlic cloves
Sauté until onion is tender then stir in
3 cups grated zucchini
Meanwhile, cook 8 ounces rotini pasta and beat 3 eggs.
Mix everything together with
1 pound Meadow Brook Dairy Cottage Cheese
1/2 cup parmesan cheese
Add 1/2 teaspoon oregano and 1/2 teaspoon basil (or more fresh if you have it).
Pour mixture into a buttered 9" X 13" pan and top with fresh tomato slices and plenty of shredded mozzarella cheese. Bake at 350° for about 40 minutes.
